Nicholas Namespetra ~ Manager  

 Nicholas draws on a career spanning over 20 years of professional experience in the hospitality industry during which he has gained a reputation for developing high engagement and high-performance teams.

For the past 5 years, he has have guided and supported operations in developing critical leadership and change capabilities.

Graduate of the internationally recognized Change Management Professional Certificate, Lean Six Sigma Master Black Belt and has completed the Red Seal designation for Chefs.

In his current role, he is responsible for leading the current food service operation into a new era for Brandon University and their students with the goal of developing a program that both the students and campus community can be proud of into the future.


Trish Chalanchuk ~ Clerk   

Trish has a love of food running through her veins. She was raised in the kitchen, where she loved cooking and baking alongside her mother, and it was clear from a very young age that she would end up with a career in the food service industry.

After starting at Brandon University as a teenager, working casually for banquets and special functions, Trish has moved her way up through the kitchen and has worked in almost every position there. For the past 12 years she has been Food Service Clerk, giving her the pleasure of being involved in so many of the major events that happen on campus, including Homecoming, Convocation, banquets, and hosting events such as the Special Olympics.

Today, she is looking forward to the new opportunities as Food Services at Brandon University continues to evolve and grow.


Paul Mount ~ Lead Cook                            

Born in Dublin, Ireland, a child of the 60’s, played rugby & hurling in school and was a member of Terenure swimming club. Took an apprenticeship as a Chef in 1986 joining the Military in late 1987, serving for a further 17 years. During this period he was involved with catering for Braveheart, PGA Tour, Irish National Hunt & the Eurovision Song Contest.

 Served with UNIFIL in 1990 in Lebanon. Operated a field kitchen at Tibnin, Receiving the Nobel peace Medal for UNIFILS contribution to Peace.

Has 3 grown sons living in Ireland Tomas, Patrick & Conor.

Suzanne Cartier is his Partner and is inventory office at Redfern farms here in Brandon.

Moved here from Alberta in May 2017 and live together with our 10-year-old dog Toby and Rocket our 10 months old spaniel cross. Is a connoisseur of Guinness .
